
New recipe courtesy of @cleanfoodfitlife (Instagram)! Fast, simple, delicious AND healthy! I made it last night and loved it.
Ingredients:
1 cup raw quinoa
8 cups arugula, washed
1/2 cup almonds, roasted and chopped
option: add baked chicken or tofu
I added strawberries.
Lemon Dressing:
2 tbsp lemon juice (about 1 lemon)
1 tbsp lemon zest
3 tbsp olive oil
1 tbsp honey
3 tbsp garlic clove, minced
1/2 tsp sea salt
1/4 tsp black pepper
I made a balsamic vinaigrette to go with the strawberries. Such a versatile recipe!
Method:
Prepare quinoa as directed and let cool.
Whisk together all of the ingredients for the lemon dressing.
Season with salt and pepper to taste.
Toss arugula, almonds, quinoa and dressing together.
Enjoy!
