If you don't have what is on this list feel free to substitute with what you do have. "It is all about quick, nutritious and delicious food."
Ingredients:
1-2 heads broccoli florets
2-3 carrots diced
1 small onion
6 sliced mushrooms
1/2 block firm tofu
rice or orzo
1 garlic clove
1 tsp cumin powder
1 tsp Braggs soya sauce
1 tsp miso
3 tbsp panko bread crumbs
fresh cilantro or basil, or both!
Tools:
Pot for rice or orzo
Large pan for veggies
Small pan to cook tofu
Step 1: Start to cook the rice or orzo according to package instructions. Set aside.
Step 2: In your large pan sauté the small onion, pressed garlic, mushrooms and diced carrots with some salt and olive oil or coconut oil.
Mushrooms have moisture so let that cook off. Brown and simmer, add in the cumin, soya sauce and miso.
Step 3: Tofu. Drain the tofu and cut into small cubes to toss in the panko bread crumbs.
Pan fry in oil until they are lightly crisped.
Step 4: When everything is ready add rice and tofu to the veggie pan and mix together.
Add in the remaining ingredients, sit together and serve. (retaining the herbs)
Step 5: Top with fresh cilantro and/or basil.
